The cave where Martí from Mas Alba matures his cheeses is an old hole dug under the farmhouse where they live. A journey to the heart of the earth where it seems that cheeses and stones enter into communion.

If you pass by Manel de Mas Marcè’s farm, in Siurana, you will discover what it is to feel devotion for animals. In this case, the Ripollsa sheep. The little eyes of Manel, it’s not that they give him too much milk, but that the milk they give him is so good and makes such unique cheeses, that perhaps his effort to save this native species of our region is worth it.

Santi de Le Bolut, on the other hand, does not have his own herd and buys milk from the goats of Mas Alba, where he spent a few years working and learning with Martí, before embarking on his own cheesemaking adventure.
